How to you know it is time to pick your olives? If you like them green, pick them before they start to turn brown. That would be before the temperature at night drops, and the tree and fruit produce a defence against the weather, and start to ripen.
The longer you wait the healthier they become. We couldn’t decide what we wanted so we picked them 1/2 way between completely ripened.
Now that we have two huge bags full of olives, what do we do with them?
I was hoping to brine them in salt water. Apparently it takes 2 month minimum and we need a very large bucket.
I would love to know if anyone has ever done this before.
